In presenting this our second published Catalogue we desire to extend grateful thanks to our numerous clientele for the liberal support accorded us in the past, and to respectfully solicit a continuance of and ever-increasing patronage for our Delicacies.

This list will also convey the pleasant announcement that while our quality will as hitherto always remain without a peer, largely increased facilities and ever-expanding trade enable us to offer our FROZEN DELICACIES, etc., etc., at a price that places them within the reach of every home as they are now looked upon as a necessary adjunct to the Dinner Table, rather than a luxury for the special occasion.

Our Flavours are our own production, viz.:—

COFFEE from the FRESH ROASTED MOCHA and JAVA BEANS.

ALL FRUIT FLAVOURS from the FRESH RIPE FRUIT, viz.: Strawberry, Passionfruit, Cherry, Peach, Apricot, Orange, Lemon, Pineapple, Prune, Raspberry.

Also SPECIAL FLAVOURS: Caramel, Rubyette, Tutti-Frutti, Neapolitan, Nesselrode.

A poor flavour is worse than none. Our method is the safe and certain way.

All materials used undergoing rigid inspection and testing—any part or portion not coming up to our standard of excellence is rejected.

The responsibility of safeguarding the health of Australia has been faithfully maintained by' the Peters company for nearly a quarter of a century in its distribution of dairy products.

From the farm to the consumer, trained experts are always supervising the production of Peters Ice Cream. Bacteriologists are continually checking and re-checking so that you may be assured the highest standard of healthfulness and quality.

LABORA TORY


Completely equipped laboratories arc maintained. Every ingredient is analysed and must come up to the standard before it can enter in as a component part of Peters Ice Cream, ensuring that the product is of the highest possible quality.


Nothing is left to chance; research work is being constantly carried out by our various Chemists to ascertain how we can improve the quality of our product.


FREEZING & PACKING. After the ingredients have been mixed, the mass is pas- ™ teurised. viscolised, cooled and aged for twenty-four hours before passing to the Ice Cream freezers. From thesr machines it is filled into containers that are familiar to all, or into various packaging machines that produce Bricks. Kleen Kups. Smaks, etc. After these operations the finished product is placed in Hardening ^ Rooms for 24 to 48 hours — before delivery to the trade.


INFORMATION.


To make high quality Ice Cream, as produced by the Peters organisation, one must have the very best ingredients. These we arc assured of both from the basis of supply and tests in the laboratory.


It would take too much space to give details of the various processes that are required from the receipt of the raw products to the completion of the finished article, we therefore ask you to come and see.


HEALTH & SANITATION. Every employee engaged in the Manufacturing or Pack* aging Departments -is medically certificated.

While in discharge of their duties, each wears suitable uniforms provided by the Company, which are changed frequently so that they are always clean.

Each receptacle is cleansed and sterilised after each operation and before going into use. This is for vour protection, and everv care is taken to guarantee the purity of Peters products.

A special staff is occupied in moulding and decorating the various fancy creations that are produced from Peters Ice Cream, which are obtainable in every possible form, many of same being illustrated herein, and are most suitable for home dinners as well as important functions

* I * HE successful hostess is always known by her selection of refined refresh--L ments and novel desserts. A little thought will prove how easy it is for anyone to serve desserts that are distinctive and different. This portion of the dainty luncheon, private dinner, or sumptuous banquet, more than any other, lends itself most readily to easy planning for unusual effect, and at the same time something pleasant and appropriate.

The purpose of this booklet is to aid the busy hostess in her selection of exactly the proper dessert to serve as the climax to her function. The many unusual designs in Ice Cream available, the many ways in which they may be varied both in flavour and colour, or a combination of these, offer you an almost endless number of dainty frozen desserts for your menu.

The hostess may accept our assurance that what she may order will reach her in perfect condition, as extra special care is used in packing and effecting delivery of these special creations.

As many of these fancy creations are only made to order, we request forty-eight hours’ notice before delivery is required. These may—if you so desire— be obtained through our dealer in your own locality.

Each and every vendor of Peters Ice Cream will be pleased to receive your order for Ice Cream and to effect delivery exactly as may be required by you. Should you prefer a special design not mentioned or illustrated in this booklet, tell our dealer or telephone us direct and we will gladly supply exactly what is required by you.

/o Reasons why you should serve PETERS ICE CREAM

COMPLETE CONTROL.—Each step in the making of Peters Ice Cream, from the pasture to the table, is under the supervision of experts.

CLEAN SANITARY METHODS.—Peters Ice Cream plants arc kept spotlessly clean. Floors are scrubbed regularly and walls are freshly painted. The machinery and equipment are sterilized daily.

PHYSICAL EXAMINATION OF EMPLOYEES.—A physician in the employ of Peters Ice Cream Company examines the health of all employees regularly.

PURE INGREDIENTS.—Pure dairy products and only the finest of flavourings arc used.

PROPER PASTEURIZATION.—The mixture is properly pasteurized by heating to 156° F., held for 20 minutes and then chilled to 35° or 40°, and held at that temperature until frozen.

FLAVOUR.—Careful blending imparts a rich, mellow flavour to Peters Ice Cream.

SMOOTH TEXTURE.—Under tremendous pressure, the butterfat globules are broken up, giving the ice cream its characteristic smoothness.

TEMPTING FLAVOUR COMBINATIONS.—In addition to the customary variety of flavours, special flavours or combination of flavours are featured if required.
