Summary Sea cage production of Australian snapper has been largely constrained during the past decade by abnormal skin pigmentation which has negatively impacted marketability. The research described in this study identified dietary, environmental and harvesting techniques to successfully alter skin colour to potentially improve the viability of snapper aquaculture in Australia.
