Summary Antioxidants are produced within the body or obtained from dietary sources. Their main role is to counter the detrimental effects of free radicals, but they are also essential for numerous metabolic processes. This thesis describes novel detection methods for the determination of antioxidants in plant based materials and physiological fluids.
