In this study, conjugates of omega-3 fatty acids and hydroxytyrosol were produced using Candida antarctica lipase. Study has shown that its possible to make conjugates of omega-3 FA and hydroxytyrosol using lipases. The resulting conjugates can be used to delivering omega-3 FA into different food without the risk of oxidation.
