This thesis provides evidence to support the classification of umami as an 'alimentary' taste. The studies in this thesis focus on the taste perception and dietary intake behaviours of the sub-group of the population with a reduced ability to taste umami. The evidence in this thesis supports the reclassification of umami taste from a 'basic' taste to an 'alimentary' taste.
