Coronary heart disease is a major cause of death in many Western countries but is less common in Mediterranan and Asian populations, and in vegetarians compared to omnivores. This thesis investigates how vegetarianism and the dietary constituents tofu and monosaturated fat affect coronary heart disease risk factors.
